The plans have been approved with the following additions and/or modifications: • The hot water generation required for this deli is 4.46 KW per hour. This based upon a maximum hot water demand of 17.5 gallons per hour. • Retail food establishments with no space on the premises for consumption of food by patrons are required to provide toilet facilities only for employees. Separate toilet facilities are not required for each sex for 15 or fewer employees where there is no seating capacity; provided the toilet is a single occupancy facility and the door can be secured from the inside. The toilet facility shall comply with the requirements of the Plumbing Code of the Town of Vail. Public toilets in the building area may suffice for the use of retail food establishment patrons and employees, if toilets are provided in adequate numbers conveniently located to the retail food establishment and available at all times the food establishment is in operation. • Approved self-draining drain boards, or utensil racks large enough to accommodate all � soiled and cleaned items that may accumulate during hours of operation shall be provided for necessary utensil holding before cleaning and after sanitizing. A multi-use service three compartment sink shall have clean and soiled drain boards measuring 24 inches. • When a three compartment sink is utilized for ware washing, the operation shall be conducted in the following sequence: o Sinks shall be cleaned and sanitized before use; and o Equipment and utensils shall be thoroughly cleaned in the first coinpartment with a hot(not less that 110 degrees F) detergent solution that is kept clean and at a concentration indicated on the manufacturer's label; and o Equipment and utensils shall be rinsed fiee of detergent and abrasive with clean water in the second compartment; and o Equipment and utensils shall be sanitized in the third compartment by immersion for 30 seconds in a clean solution containing a minimum of 50 ppm and no more than 200 ppm of available chlorine and having a temperature of 75 degrees F or more. • If required by the Town of Vail Building or Eagle River Water and Sanitation District, a grease trap or grease interceptor should be located outside the establishment. When installed inside the establishment, a grease trap or grease interceptor shall be located away from the food preparation area and be easily accessible for cleaning. The State Retail Food Regulations recommend grease traps inside the establishment be installed flushed to floor. • Properly seal sinks and drain boards to their adjacent wall. Exposed screw heads and bolts are not approved. • The minimum acceptable ceiling finish in the food preparation area is gloss enamel or epoxy-based paint on drywall; or a non-perforated vinyl-coated lay-in ceiling tile. • The minimum acceptable wall finish in a food preparation and storage area is a smooth, easily cleanable,light in color non-toxic gloss enamel or an epoxy-based paint. • Under counter surfaces must be finished and sealed to provide a washable surface. • The junctures between walls and floors shall be coved and sealed. • Light fixtures must be adequately enclosed or shielded to protect foods in the storage, serving, or preparation areas from accidental bulb or tube breakage. • All exposed food placed out for serving shall be adequately covered or protected with approved sneeze guards. • Under counter surfaces must be finished and sealed to provide a washable surface. • Garbage and refuse containers, dumpsters, and compactor systems located outside, shall be stored on a smooth surface of nonabsorbent material, such as concrete or machine-laid asphalt,that is kept clean and maintained in good repair. • All equipment must be National Sanitation Foundation(NSF) listed or equivalent. Equipment cut sheets have not yet been provided or received. Approval of these plans and specifications does not constitute endorsement or acceptance of the completed establishment(structure or equipment). A final inspection is required to determine if the kitchen is in compliance with the Colorado Retail Food Rules and Regulations.
