Box 2917 13097 Highway 9 Breckenridge, CO 80424 RE: Vail Gateway Plaza Building — Grease Trap Kelly Liken Restaurant 12 Vail Road Vail, Colorado REI Job Number: 12088.00 Bill, Based on my site visit on 12/13/12, I have the following comments regarding the existing grease trap and the need to re-pipe some of the Kelly Liken Restaurant (KLR) kitchen waste piping so that it flows to the grease trap. 1) The building has a central grease trap located outside, in the alley to the south of the building. The grease trap is approximately 12' long x 6' wide x 8' deep, with a capacity of about 4,500 gallons, and has 4" diameter waste pipe connections. 2) The grease trap was originally sized and installed to serve four restaurants in the building, but due to past renovations (where restaurants were converted to condominiums and office spaces), the number of fixtures tied to the grease trap has been reduced significantly. At this point, there is only a single restaurant, namely the KLR. It is believed that there are only two 2" waste lines that connect to the grease trap, and they are routed from the KLR. 3) It is my understanding that the grease trap is leaking and that Snowbridge will be commissioned to repair and re-seal the grease trap. 12/18/12 Gateway Building Grease Trap Page 1 of 2 4) After the grease trap leaks have been repaired, I recommend re-piping the existing KLR floor drains (FD) and floor sinks (FS) so that they are connected to the grease trap. The fixtures in the KLR kitchen and whether they will be connected to the grease trap is as follows: Fixture a. FS at dishwasher b. Pre-rinse sink with Garbage Disposer c. FS at 2-compartment sink (dishwashing) d. FS at hand sink (2-comp) e. FS at cook line (in front of range) f. FD at cook line (in front of fryer) g. FS at prep sink h. FS at island (ref. condensate) i. FD in back nook space Connect to Grease Tran? Yes No Yes No Yes Yes (already connected) No No No 5) The 4" grease waste pipe has more than adequate capacity to handle these new loads. Based on a DFU value of 3 for all 4 of the 2" pipes, this results in a total connected load of 12 DFUs. The capacity of the 4" pipe is approximately 160 DFUs. 6) It appears the re-piping work is relatively straight forward as there is a lay-in type dropped ceiling in the parking garage to access the waste piping. 7) Please provide Rader Engineering and the building Owner a copy of an as-built piping diagram showing the work completed, including pipe sizes.
