Food Service Point of Sale Plan Review
Dear Michael,
Our office received your restaurant submittal and commensurate $100 plan review fee on
November 5, 2013. The plans have been approved with the following additions andlor
requirements listed below:
Item 1 It is understood the Point of Sale facility will only use single service utensils for
beverage dispensing. If beverage containers will be reused requiring washing and
sanitizing in the existing three compartment sink, then a dump sink shall be
provided and used for the sanitary disposal of liquid drink waste, ice and/or
collection of debris emptied from glasses and mugs.
Item 2 Remember ice bins, three compartment warewashing sinks, food preparation
sinks, and dish machines must have indirect connections to the waste lines, and
shall drain into an approved receptor that will prevent any water splash and floor
flooding. Condensate drain lines from all refrigeration units and ice machines
must be plumbed to floor drains according to the plumbing code. See section 5-
206 A of the Colorado Retail Food Establishment Rules and Re�ulations.
Item 3 There are two (2) hand sinks in the existing food service kitchen facility. Hand
sinks must be conveniently located and easily accessible to persons involved in
food preparation, food service, and dish washing. However, no food service other
than beverage service will be conducted in the new point of sale facility allowing
the use of the existing kitchen hand washing sinks by beverage service
employees.
Item 4 The existing Rheem—Ruud gas hot water heater, Model 6100-400 A at 399,900
BTU output rating is more than adequate for the existing food service hot water
demand fixtures.

Item 5 There must be an approved soda carbonator backflow prevention device that
meets ASSE standards 1022 ar 1032, on the carbonation line prior to any soda
dispensing equipment at the new point of sale facility.
Item 6 The ceiling material in the point of sale facility and over the counter area must be
easily cleanable such as vinyl covered acoustic tiles. See section 6-201 B of the
regulations, "Except for in dry storage units, walls, including non-supporting
partitions, wall coverings and ceilings of walk-in refrigerating units, food
preparation areas, food storage areas, equipment-washing and warewashing areas
shall be smooth, nonabsorbent, easily cleanable, and maintained in good repair."
Also, section 6-202 D addresses exposed service lines and piping. "Exposed
utility service lines and pipes shall not obstruct or prevent cleaning of walls and
ceilings. Utility service lines or pipes shall not be unnecessarily exposed on walls
or ceilings in those areas listed in sec�ion 6-201(B) of these rules and regulations."
Item 7 All light fixtures must be adequately enclosed ar shielded to protect foods in the
storage, serving, or preparation areas from accidental bulb or tube breakage.
Item 8 A floor drain shall be provided for the existing ice machine and the point of sale
ice machine drain lines with an air gap of at least two (2)pile diameters at the
drain.
Item 9 The minimum acceptable floor finish in the point of sale facility is sealed
concrete. There must be a coved base at the floor/wall juncture in the new point of
sale facility made of an approved material.
Please respond to the above items as soon as possible so that your plan review may be completed
in a timely manner. If you would like to set up a meeting to discuss any items listed in this letter,

After your plans are approved, a final inspection of the completed establishment with the
equipment installed and operational will be necessary to determine if there is compliance with
the Colorado Retail Food Establishment Rules and Re�ulations. Arrangements for this
inspection must be made not less than seven (7) days prior to your anticipated opening.
