12c 4-403G:Wash water is less than 110 degrees F for manual warewashing.The maximum
temperature of the hot water only reaches 109 degrees F. You should have l 20 to
maintain 110 degree F water in the wash sink.
14a The grease trap only has 1/2 inch clearance underneath and thus this space will be hard
to keep clean. This gap must be adequately closed with a smooth,easily,cleanable,
durable material and sealed to prevent soiling of the area. Correct prior to opening
facility for service.The Town of Vail Building inspectar can check this on their next
inspecrion since Eagle County is not working on Friday,November 29th. Eagle County
will follow-up at as soon as possible.
