CRESPELLE WILL OPERATE AS A “GRAB AND GO”
CREPE AND COCKTAIL APRÈS BAR AT THE OLD ORE
HOUSE LOCATION. THE IDEA FOR OUR SHORT-TERM
RESTAURANT IS TO OPERATE THROUGH THE 2015
SKI SEASON UTILIZING THE GORSUCH DECK THAT
RUNS PARALLEL TO BRIDGE STREET AS WELL AS
THE ENTRANCE SPACE TO THE ORE HOUSE. OUR
TARGET MARKET WILL BE THE HEAVY SKI TRAFFIC
TRAVELING TO AND FROM THE MAIN GONDOLA ONE
EACH DAY. WE PLAN ON OPENING FEBRUARY 1,
2015 AND RUNNING THROUGH THE SPRING. OUR
PLAN IS TO DO ALL FOOD PREPARATION AND WASH
ALL UTENSILS AND COOK-WARE OFF-SITE AT THE
“YELLOW BELLY” KITCHEN IN WEST VAIL. AT
THIS HEALTH-INSPECTED KITCHEN, WE WILL PREPARE
AND PACKAGE ALL OF OUR DAILY FOOD
INGREDIENTS FOR TRANSPORTATION TO OUR
CRESPELLE LOCATION. WE WILL HAVE A TRUCK
TRAVELING TO AND FROM OUR CATERING KITCHEN
TO THE CRESPELLE LOCATION THAT WILL MEET ALL
SPECIFICATIONS FOR SAFE TRANSPORTATION OF
