Vail Restaurant Week 2013: Summary Report

Restaurants participating in Vail Restaurant Week were asked to provide year-over-year sales statistics by means
of a survey. Complete year-over-year sales data was provided by eight of the 34 participating Vail restaurants.
Based on this sample of eight restaurants, complete year-over-year data is summarized in Table 1 below. The
reporting period evaluated was Vail Restaurant Week 2013 (September 27-October 6), as compared to the
corresponding period in 2012 (September 28-October 7, 2012, when Vail Restaurant Month was occurring).
As shown in Table 1, on a year-over-year basis, substantial increases were recorded in both average dollar volume
per restaurant (up 38 percent) and guest counts (up 35 percent) for total meals served. Double-digit increases in
both sales and guest counts were also recorded across all surveyed mealtimes (lunch, après and dinner).

Data for 2013 only (without comparisons to 2012) was available from a total of 10 restaurants, a somewhat larger
sample. At this larger sample of restaurants, we calculated average “per-restaurant” sales, guest counts, and the
number $20.13 specials sold. We then extrapolated the averages to all 34 Vail restaurants that participated in Vail
Restaurant Week, assuming that reporting and non-reporting restaurants had similar average per-restaurant
performance. This resulted in projected aggregate sales statistics across the 34 participating Vail restaurants
during Vail Restaurant Week. As shown in Table 2 below, based on this methodology, we project that during the
2013 Vail Restaurant Week period, the 34 participating Vail restaurants generated approximately $1.19 million in
sales, served approximately 42,211 guests, and sold approximately 12,906 $20.13 specials.
